Abstract:

Immature dates (Doka stage) are an underutilized horticultural resource with significant potential for value-added utilization. However, a substantial proportion is lost or marketed at low economic value because of limited utilization options and inadequate postharvest management. Valorizing these immature fruits could provide an innovative pathway to reduce food losses while generating high-value products within a sustainable bioeconomy framework. This study focuses on developing a value-added functional beverage from immature dates to improve resource efficiency and strengthen climate-resilient food systems. Immature dates will be characterized for their physicochemical composition, dietary fiber, phenolic compounds, antioxidant activity, and sugar profile to establish their nutritional and functional potential. Based on these characteristics, beverage formulations will be developed using appropriate processing and preservation approaches, followed by evaluation of physicochemical, phytochemical, antioxidant, sensory, and storage stability attributes. Particular attention will be given to changes in sugar composition and indicators associated with glycemic response to assess the beverage's potential as a lower-glycemic functional product. Valorizing immature dates can transform a seasonally underutilized fruit into a commercially viable food ingredient, reducing postharvest losses and improving the economic utilization of date resources. Furthermore, converting an overlooked agricultural resource into a functional beverage may support circular resource use by minimizing raw material waste and expanding income opportunities across the date value chain. The proposed approach highlights the potential of immature-date utilization as a practical strategy for sustainable food production, resource conservation, and climate-resilient bioeconomic development.
